Pinto Beans


I was looking for a new way to prepare pinto beans. I mentioned this to my weekend cook (Brendon) and he found this recipe! I do love the traditional bowl of beans (sometimes with the sliced up sausage thrown in) and a side of cornbread, but this recipe was super tasty and worth trying. He made more than double, so we have another couple of meals in the freezer. I love extra meals that are healthy and only require heating!

We did not use spicy sausage or cajun spices. We used regular sausage and some regular herbs for seasoning. The kids are still young for food to be too spicy. It still had lots of flavor!

oops...apparently he did put in cajun spice, but not the spicy sausage.
